Flæskesteg med sprød svær

Nu nærmer julen sig og der er mange der får lidt præstationsangst når julemaden skal laves til familie og venner, er stegen og anden nu sprød og saftig ? er de brunede kartofler brune nok ? er sovsen velsmagende og kraftig eller er det bare jævnet kartoffelvand ?

Jeg hører tit at en flæskesteg er svær at få saftig, sprød og lækker på samme tid, det er ikke helt rigtigt, hvis man følger fremgangsmåden her, så skal den nok blive lækker.

Opskriften på de brunede er her på bloggen:  Brunede kartofler

Og sovsen til juleaften begynder for mig ugen før jul, jeg køber en del stegeben fra gris et par andelår. Julesovs

Stegeben og lår brunes godt af i ovnen, kommes i en gryde med koldt vand, det koges langsomt op imens der skummes for urenheder, der tilsættes lidt salt og urter (knoldselleri, gulerødder, løg med skal, lidt laurbærblade og timian.

Det koger meget stille i 10 timer og står slukket på komfuret natten over.

Om morgenen koges det op og sigtes, herefter koges fonden ned til passende smag og mængde.

Så har du fonden til juleaftens sovs, som du herefter laver som du plejer,

 

 

 

Flæskesteg

Ingredienser

2 kg. Svinekam med svær og ben

Fint salt

Groft salt

8 stk. Laurbærblade (gerne friske)

 

Fremgangsmåde

Start med at gnide den fine salt godt ned mellem sværene, lad herefter stegen stå i 30 minutter på køkkenbordet.

Læg nu din flæskesteg med sværen nedad i en bradepande, hæld vand ved, så det lige dækker sværen, og steg den ved 160 gr. i ca. 30 min.

Tag flæskestegen ud , og aftør den og drys med groft salt.

Læg laurbærblade UNDER flæskestegen og ikke mellem sværene (det giver ikke andet end nogle brændte laurbærblade og ikke noget smag)

Smagen af laurbær vil trænge op igennem kødet og give en lækker smag til kødet.

Giv nu flæskestegen 2 timer ved 135 gr. og sørg for at sværen er i lige højde, læg evt. noget staniol under stegen så den er i “vatter”, det er vigtigt når sværen skal sprødsteges.

Sæt nu ovnen til 200 gr. i 30 minutter og steg videre.

For at få den lækre sprøde svær sæt nu bradepanden med flæskestegen på nederste rille i ovnen, og skru op på 250-300 gr. nu vil sværen boble op og blive super sprød, husk at holde øje hele tiden, det går pludseligt meget stærkt.

Lad flæskestegen hvile i 20-30 minutter så saften bliver i stegen og ikke på skærebrættet.
